Ollie's Lemon Butter
3 eggs well beaten
2 lemons juice and grated rind
1/4 lb butter
1 cup sugar
Cook in double boiler until thick, stirring occasionally
May be kept in fridge, stored in jars, and is delicious in tarts, cake filling, or just on toast, yum, yumm!
